One of my favorite cookbooks is The Cake Mix Doctor, by Anne Byrn. These cookies are delicious and easy! They are a soft cookie which is my favorite kind.
White Chocolate Chewies
1 pkg. plain Devil's Food cake mix
1/3 cup water
4 tablespoons (1/2 stick) butter, melted
1 large egg
1 teaspoon pure vanilla extract
1 cup white chocolate chips
Preheat oven to 350 degrees and lightly grease cookie sheets. (I used parchement paper). Place cake mix, water, melted butter, egg, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Scrape down sides and beat for 1 minute more on medium speed. Fold in the chips until well distributed. Drop by heaping teaspoons, 2 " apart onto prepared cookie sheets. Bake 10-12 minutes. Let rest 1 minute and remove from cookie sheet.
I don't have a photo of the baked cookies! They disappeared too fast.

We love cake cookies! I've tried a yellow cake mix but we like chocolate the best. I usually put M&M's in them. The white choc chips look good too. What the heck, maybe I'll put both, and a few nuts and sprinkles too! They're great frosted too! Okay now I'm hungry. Hugs, Loretta
ReplyDeleteI swear by her recipes! I've been doctoring cake mixes for several years. I love the variety of cake mixes out there now, and can have any type of cookies in mere minutes! Red Velvet with white chocolate chips are my favs!
