Celebrating with Cherry Crunch!

When I asked my sweety what kind of cake he wanted for his 45th birthday, he requested "Cherry Crunch". It is not really a cake, but it is definitely yummy! The other big plus is that it is EASY! It is also called Cherry Dump Cake in my Cake Mix Doctor Cookbook. I can remember my Mom making it often. My method is to melt 1 1/2 sticks of butter and spread a little in the bottom of the 9 x 13 dish. Next, I dump in 2 cans of Cherry pie filling. Top this with the cake mix and sprinkle the 1 cup of chopped pecans over the top. (Sometimes, I add a little coconut.) Lastly, drizzle the melted butter over the top. I baked it for about 1 hour in a 325 degree oven. Serve with vanilla ice cream! YUMMY!
Here it is all assembled!

Just out of the oven. It smells wonderful! Time to get out the ice cream!

My sweety with our boys. Gee, I wonder what they are contemplating?
Ya'll Come Back!

  1. I think they're wondering if it's going to be enough cake. Look delish, but I've never liked cherry pie filling. It tastes like metal to me. I love cherries though.

  2. Oh my that looks delicious! My hubby would love that- he loves anything with fruit!Looks like they're wondering who'll get the first piece! Have a great night. Hugs, Loretta

  3. Oh YUM Lorilee! I can almost taste it! Thanks bunches for the recipe and I will be making it this week for sure!

  4. P.S. Happy birthday to your sweetie and many more!

  5. I'm not a huge cherry fan (love them off the trees, just not baked)...this looks really good to use with different fruit!

  6. That Cherry Crunch looks so yummy!!! I'm going to have to try making some! Big D loves anything with cherries! Hope your sweetie had a good birthday! Cute photo of the guys! Patti
