Celebrating with Cherry Crunch!

When I asked my sweety what kind of cake he wanted for his 45th birthday, he requested "Cherry Crunch". It is not really a cake, but it is definitely yummy! The other big plus is that it is EASY! It is also called Cherry Dump Cake in my Cake Mix Doctor Cookbook. I can remember my Mom making it often. My method is to melt 1 1/2 sticks of butter and spread a little in the bottom of the 9 x 13 dish. Next, I dump in 2 cans of Cherry pie filling. Top this with the cake mix and sprinkle the 1 cup of chopped pecans over the top. (Sometimes, I add a little coconut.) Lastly, drizzle the melted butter over the top. I baked it for about 1 hour in a 325 degree oven. Serve with vanilla ice cream! YUMMY!

Just out of the oven. It smells wonderful! Time to get out the ice cream!

  1. I think they're wondering if it's going to be enough cake. Look delish, but I've never liked cherry pie filling. It tastes like metal to me. I love cherries though.
