I awoke to that blustery weather Saturday morning, and it put me in the mood for my Mom's Potato Soup!
My Mom made delicious potato soup! I like to make it too! However, I've made a few changes because of my cooking habits! I don't cook as freguently, so items like half and half go out of date. Consequently, I don't keep them on hand. I do keep canned condensed soups in the pantry, so I've made some substitutions! Besides, I'd like to keep the fat and calories of half and half for desserts!
1 large onion
3 Tablespoons of butter (this time I fried 3 slices of bacon and used the fat-not healthy, but tasty!)
5 medium to large potatoes
4-5 cups chicken stock (I use water and bouillon granules)
1 or 2 cups half and half or canned milk ( I used a can of cream of chicken soup, a small can of evaporated milk with a little extra regular milk since it was a small can)
1/2 cup parsley ( I used a sprinkle of parsley flakes and a dash of chives)
salt
Pepper
Saute onion in butter (I used the bacon fat), add stock and cubed potatoes. Cook until done. Stir in half and half and/or milk/soup. Add seasonings and simmer until heated through.
I didn't get any pretty photos of it in a bowl because we were all hungry and wanting to EAT!

Sounds yummy. All you need now is a big iron skillet of cornbread to crumble into it! Potato soup is a regular on our menu; I make at least one large pot per week, and we have it regularly for lunch.
